Fern's chocolate and marshmallow cookies

Our lovely colleague Fern has shared her delicious chocolate and marshmallow cookie recipe with us.

Ingredients:

  • 250g plain flour
  • ½ teaspoon bicarbonate of soda
  • ½ teaspoon salt
  • 170g unsalted butter (melted)
  • 200g soft brown sugar
  • 100g caster sugar
  • 1 egg and 1 egg yolk
  • A handful of marshmallows cut in half (Fern uses vegan ones - they hold their shape better in the oven and don’t melt)
  • 75g dark chocolate, chopped 

Method:

  1. In a large bowl, sift flour, bicarbonate of soda and salt
  2. In a separate large bowl mix together the sugars and melted butter
  3. Beat the eggs and vanilla extract and add this to your dry flour mix and mix together
  4. Once you have a dough, mix in your chopped chocolate
  5. Place the dough into the fridge to cool for 15 - 30 minutes
  6. Preheat oven to 170°C
  7. Line a baking tray with baking paper
  8. Ball up your dough into small balls, leaving a small well for the marshmallow
  9. Add one marshmallow half to each cookie, and close the dough around it
  10. Place onto baking tray and bake for 7 - 8 minutes. They should be a light golden colour
  11. Remove from the oven and sprinkle flaky sea salt on top
  12. Leave to cool, then enjoy!
