Our lovely colleague Fern has shared her delicious chocolate and marshmallow cookie recipe with us.
Ingredients:
- 250g plain flour
- ½ teaspoon bicarbonate of soda
- ½ teaspoon salt
- 170g unsalted butter (melted)
- 200g soft brown sugar
- 100g caster sugar
- 1 egg and 1 egg yolk
- A handful of marshmallows cut in half (Fern uses vegan ones - they hold their shape better in the oven and don’t melt)
- 75g dark chocolate, chopped
Method:
- In a large bowl, sift flour, bicarbonate of soda and salt
- In a separate large bowl mix together the sugars and melted butter
- Beat the eggs and vanilla extract and add this to your dry flour mix and mix together
- Once you have a dough, mix in your chopped chocolate
- Place the dough into the fridge to cool for 15 - 30 minutes
- Preheat oven to 170°C
- Line a baking tray with baking paper
- Ball up your dough into small balls, leaving a small well for the marshmallow
- Add one marshmallow half to each cookie, and close the dough around it
- Place onto baking tray and bake for 7 - 8 minutes. They should be a light golden colour
- Remove from the oven and sprinkle flaky sea salt on top
- Leave to cool, then enjoy!
